Job description

Tandoor Construction: Building and shaping tandoors from clay, which involves molding the clay into a cylindrical shape with a wide top opening and a narrow base. The clay is shaped around a metal or ceramic lining that helps retain heat. Firing and Curing: Heating and curing the newly constructed tandoor to strengthen the clay and remove any moisture. This process ensures the tandoor can withstand high temperatures without cracking during use. Maintenance and Repair: Regularly inspecting and maintaining tandoors to ensure they remain in optimal condition. This includes repairing cracks, replacing worn-out parts (such as the metal or ceramic lining), and resealing the clay as needed to prevent heat loss. Temperature Management: Understanding and controlling the temperature inside the tandoor during cooking. Adjusting the amount of charcoal or wood used and regulating airflow to achieve the desired cooking temperature for different dishes. Cooking Expertise: Demonstrating proficiency in using the tandoor for cooking a variety of foods, including naan bread, kebabs (such as chicken tikka and seekh kebabs), tandoori meats (like tandoori chicken and lamb), and vegetables. Knowing the optimal cooking times and techniques for each type of food. Safety Protocols: Adhering to safety protocols when operating the tandoor, such as wearing protective clothing and gloves to handle hot surfaces and charcoal. Ensuring proper ventilation to avoid smoke inhalation. Customer Interaction: Interacting with chefs and restaurant staff to understand their specific requirements for tandoor-cooked dishes.
