Tandoor Construction: Building and shaping tandoors from clay, using traditional techniques passed down through generations. This involves molding and shaping clay into a cylindrical structure with a small opening at the top and a fuel chamber at the bottom. Clay Preparation: Selecting and preparing clay with the right texture and consistency for tandoor construction, ensuring it is free of impurities and suitable for high-temperature cooking. Firing and Curing: Firing newly constructed tandoors to harden the clay and remove any moisture, followed by curing to strengthen the structure and prepare it for cooking. This process typically involves gradually increasing the temperature over several hours. Tandoor Operation: Operating tandoors efficiently and safely to achieve optimal cooking results. This includes lighting and maintaining the fire, controlling the temperature, and monitoring the cooking process to ensure even heat distribution. Bread Baking: Baking various types of bread in the tandoor, such as naan, roti, kulcha, and tandoori roti. This involves stretching or rolling out the dough, slapping it onto the inner walls of the tandoor, and baking until puffed and golden brown. Meat Grilling: Grilling marinated meats, such as chicken, lamb, or fish, in the tandoor to impart a smoky flavor and charred exterior while keeping the meat tender and juicy on the inside.
