Tandoor Operation: Expertly lighting and controlling the temperature of the tandoor using charcoal or wood fire. Tandoor Makers understand the nuances of temperature control to achieve optimal cooking conditions for different dishes. Preparing Marinades and Seasonings: Creating marinades and seasonings for meats and vegetables to be cooked in the tandoor. This involves mixing spices, herbs, yogurt, and other ingredients to enhance flavor and tenderize meats. Skewering and Cooking: Skewering marinated meats, poultry, seafood, or vegetables onto metal skewers and carefully inserting them into the tandoor for cooking. Tandoor Makers monitor cooking times and rotate skewers as needed to ensure even cooking and proper caramelization. Bread Preparation: Stretching and shaping dough for traditional breads like naan, kulcha, or roti, and baking them inside the tandoor. Tandoor Makers have skills in slapping the dough onto the inner walls of the tandoor to cook quickly and develop a distinctive charred flavor. Monitoring and Adjusting: Monitoring the cooking process closely and adjusting the tandoor temperature or ventilation to maintain consistent heat levels and prevent overcooking or burning.
