Understand the nuances of heat management and airflow control within the tandoor to ensure even cooking and optimal results. Preparation of Tandoori Dishes: Prepare a variety of tandoori dishes, including tandoori chicken, seekh kebabs, lamb chops, naan bread, and roti. Marinate meats and seafood with yogurt, spices, and herbs to enhance flavor and tenderness before cooking in the tandoor. Skewering and Grilling: Skewer marinated meats, seafood, or vegetables onto long metal skewers for grilling in the tandoor. Rotate the skewers periodically to ensure even cooking and prevent burning, using specialized tools such as long-handled tongs. Adjust the heat as needed by adding or removing charcoal or adjusting the airflow vents. Bread Making: Prepare and shape dough for traditional Indian bread such as naan, roti, and kulcha, which are then slapped onto the inner walls of the tandoor to cook quickly and develop a charred, crispy exterior and a soft, fluffy interior. Tandoor Maintenance: Maintain the tandoor oven in good working condition by cleaning and scraping the inner walls to remove residual ash and food debris after each use. Repair any cracks or damage to the clay exterior and replace worn-out parts as needed to ensure proper functioning. Hygiene and Safety: Adhere to strict hygiene and food safety standards in the kitchen, including proper handling, storage, and preparation of ingredients, as well as sanitation of cooking utensils and equipment. Follow HACCP guidelines to prevent foodborne illnesses. Recipe Development: Experiment with different marinades, spice blends, and cooking techniques to create unique tandoori dishes that appeal to the preferences of guests. Innovate with seasonal ingredients or regional flavors while staying true to the authentic essence of tandoori cuisine. Customer Interaction: Interact with guests and answer their questions about tandoori dishes and cooking techniques, sharing your knowledge and passion for traditional South Asian and Middle Eastern cuisine. Provide recommendations and suggestions to enhance their dining experience. Cultural Appreciation: Appreciate and respect the cultural significance of tandoori cooking within South Asian and Middle Eastern cuisines, understanding its history, traditions, and symbolic importance. Embrace the opportunity to share this culinary heritage with guests and promote cross-cultural appreciation through food.
