Preparation of Tandoor: Ensure that the tandoor is clean, well-maintained, and properly heated before use. Remove any ashes or debris from previous use and inspect the interior for cracks or damage that may affect cooking. Firing up the Tandoor: Start the fire in the tandoor by igniting charcoal or wood in the bottom of the oven. Allow the charcoal or wood to burn until it forms a bed of hot embers, which will provide the heat necessary for cooking. Marinating and Skewering: Prepare meat, poultry, seafood, or vegetable dishes by marinating them in a blend of spices, herbs, yogurt, and other seasonings. Skewer the marinated ingredients onto metal skewers or rods, arranging them in the tandoor for cooking. Cooking Process: Place the skewers of marinated food inside the tandoor, positioning them vertically against the walls of the oven. Monitor the cooking process closely, rotating the skewers periodically to ensure even cooking and prevent burning. Temperature Control: Regulate the temperature of the tandoor by adjusting the airflow and adding more charcoal or wood as needed. Use a metal hook or tool to manipulate the position of the skewers and control the distance between the food and the heat source.
