Tandoor Operation: Operate and manage the tandoor oven, which involves heating the oven to high temperatures using charcoal or wood fire. Monitor and control the temperature inside the tandoor to ensure consistent and even cooking of food. Food Preparation: Prepare marinated meats, poultry, seafood, and vegetables for cooking in the tandoor. Skewer the ingredients onto metal skewers or rods and place them inside the tandoor for grilling and roasting. Skewering Techniques: Master skewering techniques to ensure that food items are evenly spaced and securely fastened onto skewers to prevent them from falling into the tandoor during cooking. Arrange skewers inside the tandoor to maximize cooking space and efficiency. Marinades and Seasonings: Prepare marinades, spice blends, and seasonings for marinating meats and vegetables before cooking in the tandoor. Use traditional Indian spices, herbs, and seasonings to enhance the flavor and aroma of the dishes. Menu Items: Cook a variety of tandoori dishes, including tandoori chicken, chicken tikka, kebabs, naan bread, and paneer tikka. Coordinate with kitchen staff and chefs to ensure that tandoori dishes are prepared and served in a timely manner. Food Safety and Hygiene: Adhere to food safety and hygiene standards and guidelines when handling, marinating, and cooking food in the tandoor.
