Job description

Construction of Tandoors: The primary responsibility is building tandoors from clay or other suitable materials. This involves shaping the clay into the distinctive cylindrical shape, often with a wide mouth and a narrow base. The Tandoor maker must ensure the tandoor is well-built to withstand high temperatures and frequent use. Knowledge of Materials: Understanding different types of clay and other materials used in tandoor construction is essential. This includes knowing how to mix and prepare clay for optimal heat retention and durability. Firing and Curing: After construction, the tandoor needs to be fired and cured properly. This process involves gradually heating the tandoor to high temperatures to remove moisture and strengthen the clay, which helps prevent cracking during use. Maintenance and Repair: Tandoor makers are responsible for maintaining tandoors in good working condition. This includes repairing any cracks or damages that may occur over time due to heat exposure or wear and tear. Understanding Heat Dynamics: A good understanding of heat dynamics is crucial. Tandoor makers must know how to manage airflow and temperature within the tandoor to achieve the ideal cooking environment for different dishes, such as bread (like naan), meats (like tandoori chicken), and vegetables. Customization: Depending on the client's needs, Tandoor makers may customize tandoors by adding features like insulation layers, temperature gauges, or modifications to accommodate specific cooking styles or volumes. Safety and Regulations: Ensuring tandoors meet safety standards and local regulations is important. This includes proper ventilation to prevent smoke buildup and fire hazards, especially in commercial settings. Customer Relations: In commercial settings such as restaurants or catering businesses, Tandoor makers may interact with chefs and kitchen staff to ensure they understand how to use the tandoor effectively and safely.
