Idukki, Kerala Full Time Date: 05 June 2024

Job description

Building and Repairing Tandoors: Tandoor makers construct and assemble clay ovens from scratch using traditional methods and materials. They shape and mold clay to form the cylindrical structure of the tandoor, applying layers to ensure insulation and durability. They also repair and maintain existing tandoors, patching cracks, and replacing worn-out parts as needed. Firing and Curing: Tandoor makers are responsible for firing and curing newly constructed tandoors to prepare them for use. This involves gradually heating the clay oven to high temperatures to remove moisture and strengthen the clay. They monitor the process closely to prevent cracking or damage to the tandoor. Operating Tandoors: Tandoor makers are proficient in operating tandoors to cook a variety of dishes, including naan bread, tandoori meats, kebabs, and skewered vegetables. They control the temperature and airflow within the tandoor by adjusting the fire and ventilation openings to achieve the desired cooking conditions. Bread Making: Tandoor makers have expertise in baking traditional flatbreads such as naan, roti, and kulcha in the tandoor. They stretch and shape the dough, slap it onto the inner walls of the tandoor, and monitor the baking process to ensure even cooking and proper browning. Grilling and Roasting: Tandoor makers grill marinated meats, poultry, seafood, and vegetables on skewers inside the tandoor, imparting a unique smoky flavor and charred aroma to the dishes. They rotate the skewers and monitor the cooking time to prevent overcooking or burning. Safety and Maintenance: Tandoor makers prioritize safety when operating and maintaining tandoors, as they involve open flames and high temperatures. They follow proper safety protocols to prevent accidents and injuries and conduct regular inspections and cleaning to keep the tandoor in good working condition. Quality Control: Tandoor makers ensure that the tandoor produces consistently high-quality food by monitoring cooking times, temperatures, and the appearance of dishes. They adjust cooking techniques and make necessary modifications to achieve optimal results. Collaboration with Chefs: Tandoor makers collaborate closely with chefs and kitchen staff to coordinate tandoor-cooked dishes with other menu items and ensure timely service. They communicate effectively to accommodate special requests and maintain consistency in food quality. Innovation and Creativity: While respecting traditional tandoor cooking techniques, tandoor makers may experiment with different marinades, spices, and cooking methods to create new and innovative dishes that appeal to modern tastes. Customer Satisfaction: Above all, tandoor makers prioritize customer satisfaction by delivering delicious, well-cooked dishes that showcase the unique flavors and textures achieved through tandoor cooking. They engage with customers, address any concerns or special requests, and strive to create a memorable dining experience.
