Menu Planning: Designing menus that feature a variety of traditional South Indian dishes, including dosas, idlis, vadas, sambar, rasam, curries, and chutneys. Incorporating seasonal ingredients and regional specialties into menu offerings. Food Preparation: Preparing ingredients, including grinding spices, soaking lentils and rice, and fermenting batter for dosas and idlis. Cooking dishes using traditional methods and techniques, such as tempering spices, steaming, frying, and roasting. Recipe Development: Developing and refining recipes for South Indian dishes, experimenting with ingredient combinations and cooking methods to create authentic flavors and textures. Maintaining Quality Standards: Ensuring that all dishes are prepared and presented according to established quality standards and recipes. Monitoring portion sizes, cooking times, and ingredient freshness to maintain consistency. Kitchen Management: Overseeing kitchen operations, including ordering ingredients, managing inventory, and maintaining equipment. Ensuring compliance with food safety and sanitation regulations. Staff Training: Training kitchen staff in the preparation and cooking of South Indian dishes, including proper techniques for grinding spices, fermenting batter, and tempering dishes. Providing guidance on flavor profiles, presentation, and plating. Creativity and Innovation: Experimenting with new ingredients, flavors, and cooking techniques to innovate and modernize traditional South Indian cuisine. Incorporating global influences and culinary trends into menu offerings while staying true to authentic flavors.
