Menu Planning: Create menus featuring authentic South Indian dishes, taking into account regional specialties, seasonal ingredients, and guest preferences. Develop innovative recipes while staying true to traditional flavors and cooking techniques. Food Preparation: Prepare a wide range of South Indian dishes, including dosas, idlis, vadas, sambar, rasam, chutneys, and various rice dishes like biryanis and pulao. Ensure that all dishes are cooked to perfection, with the right balance of flavors and textures. Ingredient Selection: Source high-quality ingredients, spices, and condiments commonly used in South Indian cuisine, such as rice, lentils, coconut, tamarind, curry leaves, and mustard seeds. Pay attention to freshness and authenticity to enhance the flavor of dishes. Cooking Techniques: Master traditional cooking techniques specific to South Indian cuisine, such as tempering (tadka), grinding spices and herbs using a mortar and pestle (ammi kal), and fermenting batter for dosas and idlis. Use these techniques to achieve authentic flavors and textures in dishes. Flavor Balancing: Understand the principles of flavor balancing in South Indian cuisine, which often involves combining sweet, sour, salty, bitter, and spicy flavors in harmony.
