Job description

Menu Planning and Recipe Development: Design menus featuring authentic South Indian dishes such as dosas, idlis, vadas, sambar, rasam, and various rice-based dishes (like biryanis and pongal). Develop new recipes or innovate traditional recipes while maintaining authenticity and flavor profiles. Food Preparation and Cooking: Prepare ingredients, including grinding spices, soaking lentils, and fermenting batters, to ensure quality and authenticity in South Indian cuisine. Cook dishes using traditional cooking methods such as tempering (tadka), steaming, and frying, while ensuring consistency in taste and presentation. Knowledge of Regional Cuisine: Have a deep understanding of the diverse culinary traditions within South Indian cuisine, including the variations between Tamil Nadu, Kerala, Karnataka, Andhra Pradesh, and Telangana cuisines. Incorporate regional ingredients, spices, and cooking techniques specific to each region's culinary practices. Maintaining Food Quality and Hygiene: Ensure that food preparation areas, equipment, and utensils meet sanitation standards and regulations. Monitor food storage, handling, and freshness to maintain high-quality standards and prevent food contamination. Team Management and Training: Supervise kitchen staff, including cooks, assistants, and apprentices, to ensure efficient food production and workflow. Train and mentor junior staff in South Indian cooking techniques, recipes, and presentation methods. Inventory Management and Cost Control: Manage inventory levels of South Indian ingredients, spices, and specialty items. Control food costs by minimizing wastage, optimizing portion sizes, and sourcing ingredients efficiently. Creativity and Innovation: Innovate and experiment with South Indian dishes while respecting traditional flavors and techniques.
