Collaborate with the head chef to plan and execute menus that align with the restaurant's concept and customer preferences, with a focus on traditional Thrissur cuisine. Ensure the timely preparation and presentation of all dishes according to established recipes and standards. Kitchen Operations Management: Supervise kitchen staff, including chefs, cooks, and helpers, to ensure smooth operation during all shifts. Monitor food preparation methods, portion sizes, and presentation to maintain consistency and quality. Oversee inventory management, including ordering supplies, managing stock levels, and controlling food costs. Enforce strict hygiene and sanitation standards in compliance with local health regulations. Staff Training and Development: Train new kitchen staff on proper cooking techniques, safety procedures, and kitchen protocols. Provide ongoing coaching and feedback to kitchen team members to enhance their skills and performance. Foster a positive work environment that promotes teamwork, communication, and mutual respect. Quality Assurance: Conduct regular inspections of food items to ensure freshness, taste, and appearance meet quality standards. Address any customer complaints or concerns regarding food quality or service promptly and professionally. Implement corrective actions as needed to prevent recurring issues and uphold customer satisfaction. Cost Control: Monitor kitchen expenses and labor costs to identify areas for cost reduction and efficiency improvement. Minimize food wastage through proper portion control, storage practices, and utilization of leftovers. Collaborate with management to develop strategies for maximizing profitability without compromising quality. Qualifications: Proven experience as a Kitchen Supervisor or similar role in a busy restaurant or hospitality establishment. In-depth knowledge of Thrissur cuisine, cooking techniques, and ingredient sourcing. Strong leadership skills with the ability to motivate and inspire a diverse team. Excellent organizational and multitasking abilities to manage kitchen operations effectively. Good communication skills to interact with staff, management, and customers. Familiarity with food safety and sanitation regulations. Flexibility to work evenings, weekends, and holidays as needed. Education and Certification: Diploma or degree in Culinary Arts, Hotel Management, or a related field preferred. Certification in Food Safety and Hygiene will be an advantage.
