Menu Creation and Development: Designing menus that feature a variety of Continental dishes, including appetizers, soups, salads, main courses (meat, poultry, seafood), side dishes, and desserts. Expertise in European Ingredients: A deep knowledge of European ingredients such as butter, cream, cheeses (like Gruyère and Parmesan), herbs (like thyme, rosemary, and sage), and sauces (like hollandaise, béchamel, and velouté). Cooking Techniques: Mastery of classic European cooking techniques including roasting, braising, sautéing, poaching, baking, and grilling, which are essential for achieving the desired textures and flavors. Sauce Making: Proficiency in preparing various sauces and dressings that are integral to Continental cuisine, such as wine reductions, creamy sauces, and vinaigrettes. Presentation: Ensuring that dishes are presented elegantly and attractively, often incorporating garnishes that complement the flavors and aesthetics of European dishes. Quality Control: Maintaining high standards of food quality, taste, and consistency across all dishes prepared in the kitchen. Kitchen Management: Overseeing kitchen operations, including ingredient sourcing, inventory management, maintaining cleanliness, and ensuring adherence to health and safety standards.
