Job description

Designing menus that include a variety of Chinese dishes such as appetizers (like spring rolls or dumplings), soups (hot and sour soup, wonton soup), main courses (stir-fries, seafood dishes, poultry and meat dishes), noodles (lo mein, chow mein), rice dishes (fried rice, steamed rice), and desserts (such as mango pudding or sesame balls). Food Preparation and Handling: Preparing and handling ingredients such as meats (chicken, pork, beef), seafood (shrimp, fish), tofu, fresh vegetables, and various herbs and spices essential in Chinese cooking (ginger, garlic, green onions, Sichuan peppercorns, star anise, etc.). Ensuring proper cutting, slicing, and marinating of ingredients as per the recipe requirements. Cooking Techniques: Mastering traditional Chinese cooking techniques such as stir-frying, deep-frying, steaming, braising, roasting, and quick blanching. Paying attention to the heat control (using woks or traditional Chinese cooking utensils) to achieve the desired texture and flavor (like wok hei, the essence of wok cooking). Flavor Balancing: Understanding and balancing the five key flavors in Chinese cuisine: sweet, sour, salty, bitter, and umami. Using a variety of sauces and seasonings like soy sauce, oyster sauce, hoisin sauce, vinegar, and Chinese rice wine to enhance flavors. Presentation and Garnishing: Paying attention to food presentation and plating techniques that are pleasing to the eye and reflect the aesthetic principles of Chinese culinary art. Garnishing dishes with fresh herbs, green onions, sesame seeds, or other traditional garnishes to add visual appeal. Kitchen Management: Organizing and managing kitchen operations efficiently, including maintaining cleanliness, hygiene, and safety standards. Ensuring proper storage of ingredients and monitoring inventory levels to avoid shortages. Customer Interaction and Satisfaction: Communicating with customers or waitstaff to understand preferences, accommodate special requests, and ensure customer satisfaction with the food. Adherence to Health and Safety Standards: Following food safety regulations and maintaining cleanliness in accordance with health department guidelines. Properly storing and handling ingredients to prevent contamination and ensure food safety.
