Menu Planning and Development: Creating menus that feature a variety of Chinese dishes, including stir-fries, noodles, soups, dim sum, seafood, poultry, and vegetarian options. Designing menus that showcase traditional recipes and regional specialties. Food Preparation: Preparing and cooking ingredients according to Chinese cooking methods and techniques. Using wok cooking, steaming, braising, deep-frying, and stir-frying to achieve distinct flavors and textures in dishes. Ingredient Selection and Preparation: Selecting fresh and authentic Chinese ingredients such as soy sauce, ginger, garlic, Sichuan peppercorns, and various spices. Marinating, slicing, chopping, and preparing ingredients to ensure they are ready for cooking. Flavor and Seasoning: Balancing flavors and seasoning dishes with soy sauce, oyster sauce, hoisin sauce, vinegar, and other traditional Chinese condiments. Adjusting flavors to achieve the desired taste profile of sweet, sour, salty, bitter, and spicy. Cooking Techniques: Mastering traditional Chinese cooking techniques, including velveting (pre-cooking proteins), double-cooking (parboiling and stir-frying), and quick frying at high heat to preserve texture and flavor.
