Menu Development: Creating menus that showcase a wide range of Chinese dishes, including regional specialties such as Sichuan, Cantonese, Hunan, and Shandong cuisine. Incorporating a variety of ingredients, flavors, and cooking techniques to offer a diverse culinary experience. Recipe Mastery: Mastering traditional Chinese recipes and cooking techniques, including stir-frying, steaming, braising, roasting, and deep-frying. Understanding the balance of flavors (sweet, sour, salty, bitter, and umami) and the use of aromatic spices and seasonings. Ingredient Selection: Selecting high-quality and authentic Chinese ingredients, including fresh vegetables, meats, seafood, tofu, noodles, rice, and sauces. Sourcing specialty ingredients such as Chinese five-spice powder, soy sauce, oyster sauce, and hoisin sauce. Wok Skills: Demonstrating proficiency in using a wok to stir-fry ingredients quickly and evenly over high heat. Mastering the art of "wok hei" (breath of the wok), which imparts a smoky, charred flavor to dishes.
