Menu planning: Designing menus that showcase a variety of Chinese dishes, including specialties from different regions such as Sichuan, Cantonese, Hunan, and Shandong, while considering factors like seasonality, ingredient availability, and customer preferences. Food preparation: Preparing ingredients such as vegetables, meats, seafood, and tofu, and ensuring they are sliced, diced, or chopped according to recipe specifications. Cooking techniques: Mastering a wide range of cooking techniques used in Chinese cuisine, including stir-frying, steaming, braising, deep-frying, boiling, roasting, and wok tossing, to achieve the desired textures and flavors in dishes. Flavor balancing: Skillfully combining ingredients such as soy sauce, rice vinegar, hoisin sauce, oyster sauce, sesame oil, ginger, garlic, and various spices to create well-balanced and flavorful dishes. Dim sum preparation: If working in a restaurant that serves dim sum, mastering the art of making various types of dumplings, buns, and other bite-sized delicacies, and ensuring they are cooked to perfection and beautifully presented.
